Forest Table Mushrooms is a different type of farm. Locally sourced straw from agricultural operations and invasive grasses harvested right from the farm are used to grow delicious mushrooms with the smallest possible resource footprint.
Industrial growers rely on energy-intensive lights and climate control systems. Not here! While we do carefully control the humidity and heat in our grow chamber, we use North Carolina’s plentiful natural sunlight and daily temperature fluctuations to grow our crop. Our mushrooms experience a natural heat cycle throughout the day, promoting nighttime growth, just like they would experience in nature.
